100 Calorie Banana Nut Muffins

Have you been searching for a muffin recipe that is low calorie AND delicious?


You found it!



In my experience, banana nut muffins (and banana bread) are either absolute CAKE or they are deemed "healthy" and end up tasting like dry cardboard.


That is no longer the case! These muffins are light and fluffy and the perfect level of sweetness. Heavy on the bananas and light on the nuts, just the way I like it!


Make sure you use overripe bananas, otherwise they won't be sweet enough!



This recipe makes exactly 12 100-calorie muffins. Eat them fresh from the oven, or store them in the freezer, wrapped tightly in plastic wrap or a well-sealed freezer bag.


To reheat, wrap in a paper towel and microwave for up to 30 seconds until warm, not hot. Tip: if you overbaked them and they're a bit dry, reheat them wrapped in a DAMP paper towel.


NOTE: I use a lower-calorie flour blend for this recipe. This is not required. All-purpose flour works perfectly fine!
