Mom’s Meatloaf

This is how my mom taught me to make meatloaf, and her mom taught her (miss you, Granny!) tweaked to my own modern tastes. It’s uncomplicated and comforting and a hug on a plate!

Leftovers can be stored in the refrigerator for up to one week. I have tested this recipe at 7 days, and there was no loss of flavor or texture.


This is an incredible meal prep recipe! The meatloaf is even better after resting in the refrigerator, and it pairs well with everything. Throw it on a couple pieces of bread for a fast meatloaf sandwich, or serve it with mashed potatoes and roasted broccoli.
